Hardy and Rich Gluten Free Beef Hotpot with Chocolate and Cider
This gluten free beef hotpot is traditional English comfort food at its best. A hardy stew featuring ground beef and carrots and a delicious sauce made deep and rich with the addition of chocolate, coffee, and dry crisp apple cider.
This gluten free version of the traditional Lancashire hotpot was inspired by Jamie Oliver's Beef and Guinness Hotpot from his 7-Ways cookbook. Jamie does have some gluten-free recipes in his repertoire, but that's not his focus. But what the heck, it gives people like us a chance to play a bit and experiment.

3 Reasons Why Exercise Is Important for Celiac Management
I’ve been thinking a lot about exercise lately. Not so much because of my celiac, but because I’ve been dealing with a painful shoulder impingement and it’s really driven home the need to stay in shape, especially as youth recedes farther into the rearview mirror.
As I’ve been getting back into my routine of yoga, weights and walking, I’ve noticed I feel better all over, including my stomach. This led me to look for a connection.
Here’s what I found:
Exercise Reduces Chronic Inflammation
Inflammation is a dragon we constantly battle when we have celiac. It’s a viscous circle. Gluten causes inflammation which leads to leaky gut which causes all kinds of havoc. Inflammation and leaky gut cause a lot of the symptoms of celiac including other food intolerances, and may even be a trigger that causes celiac to begin with.
Exercise Regulates Bowel Movements
You know how it goes. We swing between diarrhea and painful constipation, sometimes in a single week. Diet is important. We know we need to get lots of fiber. Avoiding sugar and processed food can help. But exercise may be just as important. It strengthens the muscles of the intestinal tract helping food to move through more efficiently. Just the act of getting up and moving around is helpful too.
Exercise Improves the Microbiome
You may know that I’m a bit obsessed with the research that’s going on to understand the gut microbiome. I really think this is where the future lies, especially for those of us with digestive issues. Exercise helps things to move along the digestive tract more efficiently, leaving less time for unhealthy pathogens to take up residence, and allowing a healthy colony of good bacteria to thrive.
So let’s get out there and get moving. We’ll feel better in so many ways.
